The category list, it's not a plugin, it's a "View", and it's a big difference in the architecture.
The source what will be displayed in the category view can be configured by menu item options



In the same way, it works in Joomla, WP, and other CMS

Therefore, we do not consider it necessary to add such an option.
You can use the method described above or add the Recent Post plugin to the page with the category you want.

Other plug-in have this option to choose category, what the real problem ?

In any case the Balbboa site is not made with Gridbox.
So the developers of sites with Gridbox have, for me, a better vision of the modifications to be made to the product.
If I think this feature is missing then this should be taken into account.

I have just created a site entirely with Balbooa products (Gridbox, Gallery, Form).
These products are extraordinary but require to evolve.
This site MUST be maintained by a secretariat (not by an experienced webmaster) so it is necessary to simplify the conception and updating principles.
You have certainly worked a lot for joomla! 4 and the app store, however we must continue to develop the other applications.
And in particular the blog and the pages.
